  • 1/3 cup butter
  • 1 egg
  • 1 teaspoon lemon peel
  • 3/4 cup chopped pecans
  • 6 tablespoons flour
  • 1/4 cup confectioners’ sugar
  • 3 tablespoons butter
  • 1/4 teaspoon cinnamon

Procedure

Melt butter in a large skillet. Pare, core, and slice apples to 1/2-inch pieces. Add apples to butter and cook, stirring, 8 minutes until tender. Stir in sugar, peel, cinnamon, mace, and currents. Cook 15 minutes, stirring until thickened. Cool. In a large bowl, combine 1 cup flour, sugar, salt, and yeast.

In a small saucepan, combine water and butter. Heat on low flame until 120 degrees F. Gradually add to dry ingredients. Beat 2 minutes. Beat in egg, peel, and 3/4 cup flour. With a mixer, beat for 2 minutes. Add remaining flour, stir in. Cover; let rest 20 minutes.

Grease 2 baking sheets. Place half the dough on a well-floured work surface, roll to 14 x12 inches. Place on sheet. Spread 1/2 filling lengthwise down the center of the dough. Starting about 3/4-inch for filling, cut 1-inch wide strips diagonally from filling to edges of the dough. Alternately fold opposite strips of dough at angles across filling. Fold ends overfilling.

Brush a large piece of wax paper with vegetable oil. Loosely cover sheet. Top with plastic wrap. Refrigerate for 2 hours. Uncover; let stand at room temperature for 10 minutes. Preheat oven to 375 degrees F.

Combine the rest of the ingredients for topping. Sprinkle over loaves. Bake 30 to 35 minutes until lightly browned. Remove from sheet. Cool.

Ingredients

  • 2 slices pound cake
  • Butter softened
  • 2 slices Cheddar cheese
  • 1/2 cup canned apple pie filling

Procedure

Butter one side only of each slice of pound cake. Place one slice of cake, buttered side down, in skillet. Layer with one slice of cheese, pie filling, and remaining slice of cheese. Top with a second slice of pound cake, buttered side up. Cook over low heat, turning carefully until golden brown on both sides and cheese is melted. Servings: 1

Ingredients

  • 1/2 cup flour
  • 1/2 cup milk
  • 2 eggs
  • 1 large or 2 medium-size apples
  • 2 tablespoons butter or margarine
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Procedure

Preheat oven to 400 degrees F. Mix sugar and cinnamon. Mix flour, milk, and eggs together. Melt butter in a cast-iron skillet (this is essential). Remove from heat. Pour mixture into skillet. Peel and slice thinly the apples. Place on top of the mixture. Sprinkle with cinnamon and sugar mixture. Bake 20 minutes. Serve from cast iron skillet.

Ingredients

  • 2 1/2 cups margarine
  • 6 cups granulated sugar
  • 6 eggs
  • 2 tablespoons vanilla extract

Topping

  • 3 cups sliced apples

Place margarine and sugar in a large mixing bowl. Cream on medium speed until smooth and free of lumps. Sift together flour, salt, and baking powder.

Judy’s Apple Slab Cake

She wrote: “Enclosed is an old family recipe for Apple Slab Cake of my grandmother’s, given to me by my aunt….This is a large cake and takes some time to prepare, but well worth the time and effort. It is enjoyed in our family by three generations.”

Ingredients

  • 3 cups all-purpose flour
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar
  • 1 1/2 to 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 cup solid vegetable shortening
  • 2 egg yolks
  • 8 tablespoons water
  • 6 teaspoons warm water
  • 14 to 16 medium tart apples, pared and sliced
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 1 teaspoon butter
  • 2 tablespoons lemon juice
  • 2 cups powdered sugar

Procedure

To make the crust: Combine 3 cups flour, salt, 3 tablespoons sugar, and baking powder in a bowl. Cut in shortening using a pastry blender or two knives.

In a separate bowl, mix egg yolks and 8 tablespoons of water. Add to flour mixture. Mix well until dough forms a ball. Separate into 2 balls. Roll one ball to cover the width and length of the jellyroll pan. Press onto bottom and up sides of lightly greased pan.

To make apple filling: Arrange apple slices over crust. Combine the remaining 2 tablespoons of flour, the remaining 1 1/2 to 2 cups of sugar, and the cinnamon. Sprinkle this mixture over apples. Dot with 2 tablespoons butter and sprinkle with lemon juice. Preheat oven to 350 degrees F.

Roll out the second ball of dough to make the top crust. Place over fruit and pinch edges to seal. Bake 1 hour or until crust is light golden brown. When the pie is done, remove it from the oven and cool completely on a wire rack.

Make the glaze by blending powdered sugar with the remaining 1 teaspoon butter. Slowly add the remaining 6 teaspoons of warm water and mix until smooth. Top cooled cake with glaze. Makes 15 to 20 servings. Although this dessert is called a cake, the consistency is more similar to that of a pie.

Ingredients

  • 1/2 cup shortening
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup honey
  • 3 eggs
  • 1/2 cup applesauce
  • 1/4 cup honey
  • 1 (6 ounces) package semisweet chocolate
  • 2 3/4 cups cake flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder

Procedure

Cream shortening with sugar until light and fluffy. Continue creaming while adding honey in a fine stream. Add vanilla. Add eggs one at a time, beating after each addition. In a saucepan, combine applesauce, 1/4 cup honey, and chocolate pieces. Heat slowly until the chocolate is melted and the mixture is smooth. Cool.

Sift dry ingredients together. Add alternately to creamed mixture with the chocolate-applesauce mixture. Beat after each addition until smooth. Spoon into two 9-inch greased pans.

Heat oven to 350 degrees F. Bake 25-30 minutes or until cakes test done in the center. Cool on racks for 5 minutes. Remove from pans. Finish cooling on racks before frosting as desired.

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup shortening or butter-flavor shortening
  • 1 (4 ounces) package shredded sharp Cheddar cheese (1 cup)
  • 1/3 cup packed light brown sugar
  • 1/4 cup dark seedless raisins
  • 1/4 cup walnuts, chopped
  • 4 tablespoons (1/2 stick) butter or margarine, softened
  • 1 teaspoon ground cinnamon
  • 6 small Golden Delicious apples (about 2 pounds)
  • 1 large egg
  • 6 whole cloves
  • 1 1/4 cups apple cider or apple juice
  • 1/2 cup maple or maple flavor syrup

Procedure

Prepare pastry dough: In a large bowl, with a fork, stir flour and salt. With a pastry blender or two knives used scissor-fashion, cut shortening into flour mixture until mixture resembles coarse crumbs; stir in cheese. Sprinkle 8 to 9 tablespoons cold water, a tablespoon at a time, into the mixture, mixing lightly with fork after each addition until dough is just moist enough to hold together. With hands, shape dough into a ball. In small bowl, with fork, mix brown sugar, raisins, walnuts, margarine or butter, and cinnamon.

Peel apples; remove cores but do not go all the way through apples. Preheat oven to 400 degrees F. Reserve 1/3 cup pastry dough. On a well-floured surface, with a floured rolling pin, roll out the remaining dough into a 21 x 14-inch rectangle. With a pastry wheel or knife, cut dough into six 7-inch squares.

In cup, with a fork, beat egg and 1 teaspoon water. Center an apple on the square of dough. Spoon one-sixth of sugar mixture into the cavity in apple. Brush edges of the square with some egg mixture. Bring points of square up over apple, pinching edges together to seal well.

Repeat with remaining dough squares, apples, and sugar mixture. With pancake turner, place dumplings in greased 13 x 9-inch baking dish. On a floured surface, with a floured rolling pin, roll out reserved dough 1/4 inch thick. Cut 12 leaves from dough; score with the tip of a knife to make “veins.” Brush dumplings with some egg mixture; press 2 leaves on top of each dumpling and brush them with egg mixture. Press cloves, rounded-side down, into dumplings to resemble stems. Bake dumplings for 35 minutes.

In a bowl, with a spoon, stir apple cider and maple syrup; pour cider mixture over dumplings. Bake dumplings 15 minutes longer (cover with foil after 3 minutes if dumplings are over-browning), basting occasionally with cider mixture in a baking dish, until pastry is golden brown and apples are tender when pierced with a skewer. Stir in apples. Spoon evenly over the crumb layer. Bake 25 to 35 minutes or until wooden pick inserted in center comes out clean. Cut into squares and serve with whipped cream. Can be served warm or cold. Serves 12 to 15.

Baba’s Apple Cake 

Preheat oven to 375 degrees F.

Ingredients

  • 5 cooking apples
  • 1 tablespoon cinnamon
  • 3 cups all-purpose flour
